Apricot Coconut & Sapote Granola Bars

 

The difficulty level is seriously low but the YUM factor is deliciously high! The only secret is to press the granola firmly into the pan!! Now that you know how easy it is to whip up a batch of these home made granola bars, get to it! You can even switch up the ingredients to make pretty much any flavour combo that suits your fancy so just use what you have in the cupboard!

Here's what you'll need for 10 bars

1 cup cooked Freekeh

1 cup quick oats

1/2 cup steel cut oats

1/2 cup chopped apricots

1/2 cup flaked coconut

1/3 cup melted butter (or coconut oil)

1/2 cup maple syrup (or honey)

1 ts grated sapote (or cinnamon)

pinch of flake salt

1/3 cup chocolate (for drizzling)

Start by preheating the oven to 350. In a large mixing bowl combine the cooked freekeh, oats, apricots, coconut & sapote. Then mix in the melted butter & maple syrup and sprinkle of salt. Transfer the mixture into a lined cake pan & firmly pack down the granola with a spoon or spatula. This step ensure that you don't end up with loose granola!! Bake for 15-20 minutes, until sides start to become golden. Let cool before drizzling with melted chocolate and then refrigerate overnight before cutting into bars. Store in the fridge or at room temperature in an airtight container up to 7 days (trust me, they won't last that long!!!!).

Don't be afraid to have fun with the ingredients and switch up some of them up... the flavour combos are virtually limitless :)
