The Perfect Roast Turkey
with porcini butter & savoury bulgur wheat stuffing
If you are joining in from my Instagram page, you probably read my tips for cooking a moist turkey. And while following these tips will ensure your bird stays moist, I’m sharing my recipe for a truly flavourful roast turkey. My secret lies with a porcini butter and an unconventional stuffing!
Bulgur Wheat Stuffing
A traditional bread stuffing contributes to drying out the meat because it absorbs the turkey’s moisture. However, this stuffing recipe incorporates raw ingredients that cook in the turkey , flavouring it while keeping it super moist.
2 cups cooked bulgur wheat (you can also use freekeh or farro)
1 large onion chopped
4 carrots chopped
2 celery root stalks & leaves chopped (can substitute with regular celery)
4 cloves of garlic, minced
1/2 cup sliced almonds (optional)
1/2 cup evoo
2 ts flake salt
Sprinkle of Fresh thyme
In a large bow mix all the ingredients together. Make are to pat the turkey dry (inside & out) before filling it as much as possible without packing it in too densely.
Next, butter it up!
The trick is to massage the butter mixture all over the turkey, even underneath the skin for delicious flavour, moist meat & crispy skin!
1 cup softened butter
1/4 cup EVOO
1/2 porcine mushroom powder
2 ts coarse or flake salt
In a bowl, mix the butter, EVOO, mushroom powder & salt. Use your hands to loosen the skin around the thighs and breasts and the apply 1/3 of the mixture between the meat & the skin. Use the remainder of the mixture to cover the entire surface of the turkey, including the wings and legs. Add a few sprigs of fresh thyme in the nooks of the legs & wings and its ready to be cooked or you can stick it back in the fridge if you are doing this ahead of time.
