Cauliflower Slaw &
Yogurt Lime Dressing

 

Cauliflower, apples & radishes sliced thinly make an original & highly nutritious slaw salad. Topped with toasted pumpkin seed for crunch, the actual secret lies in the sauce! 

Makes 4-6 meal portions 

 

Ingredients:

1 head of cauliflower

1 apple 

5 medium radishes 

1/2 cup pomegranate seeds

1/2 cup toasted pumpkin seeds

 

1 cup greek yogurt

1/4 cup premium EVOO 

1 tbs lime zest & juice (each)

1 tbs chopped chives

1/2 ts garlic powder

Salt & pepper to taste

Instructions:

  1. Finely chop all the vegetables and place in a large bowl.

  2. In a separate bowl, whisk the yogurt, evoo, juice & zest, chives, garlic powder and salt & pepper together.

  3. Drizzle several spoonfuls of the dressing over the veggies and mix well.

  4. Toss in the pomegranate & pumpkin seed and  serve.

TIP: You can use the rest of the dressing as a zingy dip or add an extra dollop on each portion for an extra decadent treat!
