Marmalade Glazed Salmon
Salmon, like most fish can be tricky to make for a crowd because it its over cooked, no matter how good the seasoning is, its aweful! So my reccomendation is to portion out the fresh filet into small even sizes to ensure the cook time is as short as possible, don't let it marinate too long or else you'll end up with ceviche, and lastly, stick the whole baking sheet of cooked salmon directly from the oven to the fridge to stop any additional cooking from the residual heat.
1 filet usually makes 10-12 portions
Fresh salmon filet (skin on)
1 TS each fresh zest (orange, lemon, grapefruit)
3 TBS marmalade (see recipe in Something Sweet)
1/3 CUP freshly squeezed orange juice
1 green onion, chopped finely
1/4 CUP EVOO
Salt & Pepper to taste
Cut the salmon filet in half length wise and portion each half into 1.5" pieces.
In a large bowl or dish place all the salmon portions and set aside.
In another bowl add all the other ingredients and whisk together.
Preheat your oven to 375 F
Drizzle the glaze mixture over the salmon pieces and then give it a good toss to ensure the salmon is coated evenly.
Place each piece 1/2 inch apart, skin side down on a baking sheet
Bake for 7-8 min
Let chill in the fridge
Serve cold with citrus fennel salad and garnish with pommegranate... enjoy!
