Three Citrus Fennel Salad
Fresh, fresh, fresh!!! This fennel salad is supremely superior to all the rest!
Here's what you'll need:
Sweet lemon (or your regular lemon)
Premium Olive Oil
Salt & Pepper
Here's what to do...
Start by toasting your pumpkin seeds in a pan and set aside. Zest, peel and supreme the citrus and put in a large bowl, reserving some of the zests for the garnish. Finely chop the fennel & celery (almost shredded) and add to the bowl along with the seeds. Sprinkle a bit of white balsamic, a generous drizzle of olive oil, a ts of marmalade, salt & pepper to taste and toss gently.
Garnish with a dollop of fresh ricotta and a sprinkle of fresh citrus zest.
