Lemon Thyme Cookies
Its impossiblle to eat jst one... these are the perfect balance of sweet & savoury, where fresh thyme and extra virgin olive oil are the unexpected shining stars of this recipe. But don't forget that drizzle of white chocolate, it's what takes it to the next level!
Makes 36 cookies.
1/3 cup of salted butter
1 1/2 cups of sugar
1/2 ts pure vanilla extract 2 large eggs
1/3 cup premium olive oil 2 lemons (zest)
1/2 ts fresh thyme leaves 1/2 ts baking powder
2 cups of unbleached flour
1/2 cup of white chocolate chips
1/2 ts fresh thyme leaves
Combine the butter, sugar & vanilla until creamed (3-4 min).
Add olive oil, zests, thyme and then one egg at a time, mixing until light and fluffy.
Incorporate the flour and baking powder, being careful to not over mix.
Refrigerate 30 min before rolling into 1 inch balls. Place 6 per baking sheetand bake for 7-9 min at 350 ̊F.
Melt the white chocolate and drizzle or dip and garnish with thyme leaves and a pinch of finishing salt.
Let set in the refrigerator 15 min before serving.
These are probably the most addictive cookies i've ever made, so if you are planning to do these during the holidays... you should consider making a double batch :)
